I love that you are eating with a real spoon and real napkin..I think that makes everything taste better. Beautiful picture.

Why thank you, Mary! The only problem with using a silver spoon in a photo, though, is that I always wind up with a self-portrait in it too!

It WAS so good, wasn’t it? What kind of noodles did you use? I ended up with brown rice maifun noodles from Annie Chun, but I wonder if a thicker noodle would be a better idea… (Not that I had any complaints about my version!)

Totally agreed — I hate to be such a colonial, but… I love the way French (cookery) sensibilities get along so well with their former colonies, and this soup is such a great example of that. It’s delicate and balanced, but still so much of its place.
As for the noodles, I used a Chinese egg noodle of the from-that-random-Asian-mart persuasion. I realize that this soup is not actually pho, but next time I make it, I’d actually be more inclined to go in your (and the more traditional) direction, i.e., for rice noodles.

Oh that soup bowl is adorable. I love that you added bean sprouts to the soup, I think it would be great with some fresh crunchy stuff on top. I’ll definitely go that route next time.
